Being that today is the first full day of pro football, Lucas and I are pretty much bein’ couch potatoes.

I did manage to make a trip to the grocery store for our weekly shopping trip, but now my legs are getting tight and the soreness is starting to set in. So couch potato-ing sounds the like the perfect thing to do right now.

I started to get a little hungry and need some food. I decided to make some homemade hummus!

So easy!

Apricot Hummus

-1 can chickpeas
-1 tsp apple cider vinegar
-1 1/2 tsp olive oil
-1 tbsp apricot preserves
-salt and pepper
-1 garlic clove
-water to thin

Put all items in a food process and blend. Start to add water until you reach desired consistency. Eat any way you choose :)

I decided to put my hummus on some toast, with some cukes and orange on the side.

Perfect lunch! Since I know we’ll be having pizza and wings for the COWBOYS game!!
