Over the weekend I was sorting through my tinsy pantry, trying to “organize” the food mess going on. Why is pantry organizing so hard? It seems no matter how hard I try, the darn thing always looks so cluttered.

While cursing all the boxes, bags and cans, I stumbled upon this.

The cursing suddenly stopped and I had a flashback to these goodies that Jessica made.

And wouldn’t you know that there was a canister of oatmeal in the tinsy pantry. My brain started swirling with thoughts of oatmeal.

Have I ever mentioned how much I love oatmeal?

No?

Well I do. I really do.

I think this may have been the only time that I didn’t have oatmeal for breakfast in over a year. Hey, I like what I like, and am definitely a creature of habit.

Something I love even more is when I can have oatmeal for dessert. It makes my dessert feel more healthy…therefore I eat more than I probably should. I love oats.

And when oats start off looking like this, what’s not to love?

I took one more devilish step by adding some semi-sweet chocolate chips.

Muah-ha-ha!

(Which were not found in the tinsy pantry, but in the freezer. All of my baking chips live in the cold, lonely freezer)

My mouth was literally drooling as I was making these easy peasy oatmeal bars.

One thing that I would do differently next time is the rough chop the cherries, just so they can better distribute throughout the batter.

Yeah. That’s what I’m talking about.

The oatmeal has a slightly chewy texture, which really gets me excited.

Then there’s the burst of the cherry in your mouth, combined with a gooey chunk of chocolate.

These bars mean business. They’re not here to play around.

They are here to make all your worries disappear.

They want to become the person you will call late at night when you can’t sleep.

They will be your best friend.

Chocolate Cherry Crumble Bars
adapted by How Sweet It Is

Ingredients

1 1/2 cup rolled oats
3/4 cup whole wheat flour
3/4 cup brown sugar
1/4 tsp salt
1 teaspoon cinnamon
1 tsp vanilla extract
1/2 cup butter + 2 tbsp
1 can sweet pitted cherries (drained)
1 cup semi-sweet chocolate chips

Directions

Preheat oven to 350.

In a large bowl, combine flour, sugar, oats, cinnamon and salt and mix until combined. Melt the 1/2 cup of butter and add it, along with the vanilla, to the oat mixture. Stir until moistened. Fold in the cherries, don’t worry if they tear a little. Stir in the chocolate chips.

Butter and flour an 8×8 baking pan. Press batter into the pan. Melt remaining butter and drizzle it over the bars. Bake for 20 minutes, the let cool completely. Cut and serve. Can be kept in the fridge or at room temperature in a sealed container.

oh gosh DANG good golly girlfriend!! these look amazing. love the melty chocolate – definitely a great addition.

I’m feeling the same way about my pantry right now – overflowing and crazy unorganized. I suppose I should feel lucky about that, right? :D
