Cookie love!
Because Valentine’s Day is right around the corner!! I can’t believe it. I haven’t even started thinking about my hubby love gift.
That’s why I made these cookies. I was hoping they’d inspire my brain to start thinking of red and pink and tons of hearts.
Unfortunately, the only thing it inspired was my love of eating cookies. And let me tell you, I succeeded B-I-G time at it!
These cookies had no chance.
The funnier part, is that these cookies had no chance against Lucas either. When I woke up in the morning, I found not one. not two. not three. but six. SIX cookies missing. I also found six beer bottles in the trash.
Beer and jammie heart cookies? Not what I would go for. Maybe it’s a guy thing.

I think he’d be so happy! And it’s a score for me too. Of course since I’m making the cookies that means I get to eat some peanut butter cookie dough. And stuff my face with strawberry jam. Yes. That’s how my cookie making goes. A bite of cookie dough batter. Then a spoon of jam. I do this back and forth until I realize I’m running out of dough. And that’s the only thing that makes me stop.
I love these cookies.

PB and J Heartprint Cookies
makes 30 love cookies
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup smooth peanut butter
1 stick unsalted butter, softened
1/3 cup packed light-brown sugar
1/3 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1/2 cup strawberry jam
Preheat oven to 350 degrees.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt, set aside. In the bowl of a stand mixer, beat peanut butter and butter on medium speed until smooth. Add in the brown sugar and white sugar, beating until batter is fluffy, about 2 minutes. Add the egg and vanilla, and beat until incorporated. Reducing mixer to low add in the dry ingredients and beat until flour just disappears in to the batter.
Scoop out teaspoons of dough and roll in to balls. Place 2 dough balls, on a baking sheet, next to each other and press thumbs in to each ball to make and indentation. Press in to the center of the two balls, dragging finger down and mold in to a heart shape. Continue this process until all the dough is done.
Bake cookies for about 8 minutes. Remove from oven, and with the bottom of a wooden spatula handle, re-press the heart shape. Return the cookies back to the oven and bake for another 5 minutes, or until edges are golden brown. Transfer cookies to a cooling rack.
Heat jam in a microwave safe bowl, for about 30 seconds, just to loosen it up. Spoon a little bit of jam in to the center of the cookies and distribute it to fill the heart.

These are so. cute. I love the idea of making the thumbprint cookie into a heart!! Hopefully they will jumpstart both of our Valentine’s Day brains…

I only ask because I know all nut butters have slightly different consistencies/oiliness
What would you recommend substituting for peanut butter? My bf is allergic
Is it just peanut butter that he’s allergic to, because I think Almond butter would work. Sunflower butter might, but it might be a little more oily.
