So, it’s Monday…and in one week I’ll be on an airplane!!
I can’t tell you how excited I’m getting!
Sunny beaches. Coconut drinks. The smell of tanning lotion. LOVE IT.
The week before vacation always gets a little crazy. So many things to do, so many things to buy, so many things to clean. I go in to overdrive the week before vacation, especially in the cleaning department. I hate coming home to a dirty house, so I kind of super clean the house. It drives Lucas nuts. I mean for God’s sake, I spent an hour last night…late last night…like 10 pm late…cleaning out my closet and drawers. I purged 3 garbage bags of clothes. Who does this.
And yes, 10 pm is wwaaayyy late for me. I’m the 8:30 bedtime kind of girl.
I also don’t go too crazy in the kitchen the week before vaca. I try to use up everything in the fridge and pantry so that nothing already bought goes to waste while we’re gone.
I wish I could do this every week. My groceries this week were only $50! Usually it’s double that.
In my pantry raid I found a box of cookie mix. I’m not sure where it came from. But it was in there. And the moment I saw it I had a sudden craving for cookies. And the box said there were dark chocolate chips. DARK CHOCOLATE. yeah…I instantly tore in to the box.
My fist thoughts were to make an easy cookie pizza.
But, then I knew that a thin little cookie crust wasn’t gonna cut it. I’m not really a thin crust person. I like it thick. Unless we’re talking about my thighs of course. Of course.
So, my pizza quickly turned in to a pie. But the whole concept still works.
Did I mention that this is ready in like 40 minutes?
And now there’s one less thing in my pantry.
Total win win.
I think I’m almost ready for vacation!!
Cookie Pizza Pie
makes 8 delectable slices
Box of pre-made dry cookie dough (I used Kodiak Cake’s Bear Country Cookie Mix)
1/2 cup applesauce
1 egg
8 oz cream cheese
2 tablespoons brown sugar
1 tablespoon maple syrup
2 cups sliced strawberries
Preheat oven to 350 degrees.
In a medium bowl hand-mix dry cookie dough with applesauce and egg. Spread dough in to an 8 inch pie plate. Bake cookie for 30-35 minutes or until cookie is golden brown and a toothpick inserted in center comes out clean. Remove from oven and let cool completely.
In a small bowl beat cream cheese, brown sugar, and maple syrup together. Spread over the top of the cookie. Top with sliced strawberries and dig in!

Very creative use of the cookie mix, love the topping as well as the height on these goodies! I have never used a packaged mix before, but now this post has my mind thinking about all the things you can do with that sort of thing. However, I would first have to try your recipe here-yum!
You are correct in doing the clean out and making everything spotless for your homecoming after the honeymoon. I do not like to come back to a pile of things that need to be done either. This way you can still bask in the memories of your honeymoon and relax a few days afterwards. Have a great day Steph!

I always try to clean out things that could spoil before I go on vacation. It is really amazing how much you can make with things you already have – and how much money it saves! Makes you feel like you should do it all the time. Love the cookie pizza and happy packing!
I have the same cleaning habit. My husband thinks it is irrational and annoying. Think the annoyed part comes from me trying to recruit him to help.
Thick is so much better than thin! And I love the sliced strawberries on top…..mmmmmm.

I am the same way when I leave for vacation. I am not normally an obsessively clean person, but as soon as vacation time rolls around all I can think about it coming home to a clean house…come home relaxed and stay that way awhile. Your cookie cake looks delightful! I love the strawberries and cream cheese on top too. A lovely treat!
