Lime Poppy Seed Doughnuts

Uh-oh.

I think I did something crazy.

Like dripping with sweet, sweet glaze crazy.

I had a t-o-n of limes left over from my “IjustranahalfmarathonsoIneedamargarita” weekend. And donuts just sounded like the way to go.

I’m a huge fan of poppy-seed cake…but knew I’d be even more obsessed with the little black seeds if they were in heavenly doughnuts. Heavenly glazed doughnuts. Studded with lime.

Because I totally am. And can I tell you a secret?

You’re gonna think I’m a whacko…but that’s ok. See all that left over glaze that dripped on to my counter? I totally wanted to stick my tongue in it. Yeah. Like full on lick the counter-top moment of insanity. But I didn’t!

I did however run my finger through it and proceeded to stick it in my mouth. Told you. WHACKO.

These little doughnuts are like a bursting ray of sunshine. Perfect for the creepy afternoon clouds that have been rolling in.

Clouds, dark clouds kind of creep me out. Especially when I see flashing thunderbolts and my trees starting to shack wildly in the stormy breeze. Totally reminds me of The Wizard of Oz.

Then I start thinking of the scary monkeys.

Why does that happen to me.

My brain just wanders off on tangents. I have the attention span of a 2 year old. I swear.

I do have a long enough attention span though for The Voice.

Love that show!!

And totally in love with the idea of the Mickey Mouse Club GUY singing a GIRL song. Makes me want to pull out all of my old Britney Spears CD’s. You know, the ones she made before she went off the deep end and shaved her head.

Those old school songs (old school?!) make me want to clear all the furniture out of my living room and have a dance party. I think it would be a lot of fun.

I can totally manage dancing and donut eating at the same time. I’m very good at multitasking! Just ask the Hubby. I can drive (a stick shift), put on makeup, steer with one knee, and search through my iPod songs, all while explaining to him that I’m being totally safe and this is just how I drive.

If you see me on the road — you might wanna pull over.

Because I’m now adding donut scarfing to that driving list.

Lime Poppy Seed Doughnuts
makes 10 scrumptious doughnuts

1/2 cup light coconut milk

3 tablespoons light sour cream

1 1/2 cup all purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

6 tablespoons unsalted butter

1/2 cup sugar

1 large egg

zest of 1 lime

1 tablespoon poppy seeds

For the icing:

Zest of 1 lime

Juice of 2 limes

2 cups powdered sugar

1/4 cup milk

Preheat oven to 350 degrees F. Spray doughnut pans with cooking spray, set aside.

In a small bowl, whisk flour, baking powder, and salt together, and set aside. In a separate small bowl, whisk together milk and sour cream, and set that bowl aside.

In the bowl of a stand mixer, add in the butter and sugar, beat on medium for 2 minutes to until mixture is pale in color and fluffy. Add in the egg, lime zest, and poppy seeds, and beat for 1 minute to combine. Add in a third of the flour, then half the milk, 1/3 flour, rest of the milk, and then the rest of the flour. Beating after each addition, make sure not to over mix though!

Spoon batter in to donut pans, filling about 3/4 full. Bake for 11-13 minutes or until doughnuts are a light golden brown. Remove from oven and let cool in pans for a few minutes, then transfer to a cooling rack to cool completely.

For the icing:

Combine all ingredients in a medium bowl, whisking until smooth. You want the glaze to be a little thick so that it stays on the doughnuts, but if it’s too think just add a little more milk. Dunk the tops of the doughnuts in the glaze and return to cooling rack to let the glaze dry. Dunk the doughnuts a second time to form a thick glaze coating. Then scarf!!

Holy canoli! These look so good. Those photos are so beautiful. I love poppy seeds but I seriously hate how easy they lodge themselves into my teeth. This looks totally worth the floss session I will have afterward. :)

Yes, these donuts would be a great diversion to thunderclouds outside. They would transport you to a tropical place. I do not get that stressed out but the dog sure does. There are no thunderclouds here, but I do not need an excuse for these! Right now I cannot think of any more tasty looking pictures of a donut than the ones here. Well done Steph!

These look dangerously good that I would also eat them while driving. Side note I totally would run my finger through frosting on the counter and then eat it! What happens when no one is looking is my business lol!

OH GOD. I’m dying.
I love anything with poppy seeds…but I’m not sure I’ve ever seen them in a donut! And that glaze? Just drown me in it, please.

The advantage of not living in the same state as you is that I won’t be on the same road when you’re driving. The disadvantage is that I can’t just drop by for coffee and doughnuts! If you’ve seen the cocktail section of my blog than you know that ours is a lime-intensive household and I absolutely love poppy seed cake! :)

Ooooh, amazing!! I had a lime glazed donut holes once (aka little balls of heaven) — pairing the lime with poppy seeds just makes it 10x better. Great recipe!
