Hello there all you Steph’s Bite by Bite readers! I’m Kelly from the blog Eat Yourself Skinny and I was so excited when Miss Stephanie asked me to guest post for her while she’s on her fabulous vacation! Speaking of vacations, I’m totally obsessed with summer. Sure falling leaves, spiced lattes and the occasional scarf make my heart swoon, but there is nothing better than warm sunshine and cute flip flops to make life seem just a little bit easier!

Oh and a yummy cocktail too, of course.


So I wanted to share a recipe that completely encompasses this fabulous season and one that you could make for cookouts or other summer parties. This Minty Mango Salsa is perfect paired with tortilla chips or you can top your pork chops or burgers with this fresh off the grill! And the best part? This salsa is so easy to make, I bet you could whip this right up during a commercial break while watching the Real Housewives!

Yes I know you watch those dysfunctional ladies and all their re-runs. They’re like a train wreck, you know you shouldn’t watch, but you just can’t look away! That show is definitely my guilty pleasure.

Anyway, this salsa is only 40 calories for a half cup and is completely fat-free! So fire up the grill, invite over all your friends and mix together some cocktails because this fruity/spicy/sweet number deserves a party of its own!


Minty Mango Salsa

1 large ripe mango, peeled and diced
1 medium sweet red pepper, diced
1 (4 oz) can chopped green chilis
1/4 cup chopped green onions
1 Tbsp lime juice
2 tsp. minced fresh mint leaves
1/4 tsp. ground ginger
Tortilla chips (optional)

In a small bowl, combine the mango, pepper, chilis, onion, juice, mint leaves and ginger. Cover and refrigerate for at least 8 hours. Serve with tortilla chips or alongside your meal, enjoy!
