Summer Fruit Popsicles

Alternatively titled: It’s hotter than a MOTHER and this is the best way to cool off.

But seriously, this heat is so ridiculous. Maybe it’s because I’m getting to be so old, but I can’t do heat. So, I talked Logan in to helping me make some popsicles that are super easy, super cool, and super good for you…I mean the kids.

We’ve been trying so many ways to beat the heat, and all of them are coming up short. We tried our kiddie pool, but with no shade in the backyard, and one kid who wants to splash water in everyone’s face, and one who wants to bail the water out, it seemed pointless. We’ve tried indoor games, but the heat makes everyone too cranky to play and listen to the rules. Logan keeps telling me everyday that he’s so “fweaty from the heat….see mom, feel my head. My temperature is ten-seventy five-eight-eight-eight degrees”.

Popsicles are the perfect way to break that “fweaty-ness” and keep everyone sitting still for a few minutes. And these are made with only 4 ingredients!

Summer Fruit Popsicles

Prep Time: 5 minutes

Cook Time: 5 hours

Total Time: 5 hours, 5 minutes

Yield: 4-6 popsicles


  • 10 oz bag of frozen fruit [we love the mixed berry blend]
  • 1 can full fat coconut milk
  • 1 tsp vanilla
  • 1 tbsp sweetener [we use Stevia]


  1. Add all ingredients to a blender, and puree until smooth.
  2. Then, poor in to popsicles molds and freeze until firm and hard. Our popsicle molds come with their own stick lids, but if yours don't then just remember to put the sticks in when the popsicles are about half way frozen. Run the frozen popsicle under warm water for a few minutes to release from the mold.
