Whole Wheat Oatmeal Caramel Chocolate Chip Cookies

Today was a day, where I tried with all my mama energy not to let the struggles of the day get to me.

You know when you have kind of a plan in mind for how the day is going to go, but then your kids have a totally different plan? Well, that was us today.

The activities I had planned transformed in to something else, the nap time I had planned didn’t happen. So, you know what I decided to do? Make cookies. I mean. Seriously. When you’ve got some rowdy kids, and the toddler is refusing to nap, you just pull out the mixer.

That quickly got their attention and got them eager to help. This was actually the first time that Holly got to stand up at the counter and help add things in to the mixer. And she LOVED it! I think she just felt so special to be doing something that Logan was doing. She was copying every little movement he’d do, and try to mimic every little word.

Of course, when I pulled out the chocolate chips, Logan started saying “ohhhh can I have some” and Holly just kept saying “mo – mo – mo”, that’s her version of more. Needless to say, the chocolate chips didn’t help the rowdy-ness. But hey. What can you do.

I’ll be honest too, that these cookies kind of came together as an accident. Half way through making the traditional chocolate chip cookie recipe, I realized I didn’t have enough regular flour. I wasn’t about to let this turn in to a mom fail. I just pulled out the whole wheat flour and oatmeal from the pantry, and said a little cookie prayer.

I think the best things happen by accident. These cookies being one of them, They’re soft and chewy, but the whole wheat flour gives them an extra nuttiness to them, that’s just sooo good. The other best accident today, was actually having my whole plan thrown off. Because for once, I just let it go. I turned my chips in to cookies, I got to play Candyland for an hour, we painted the recycling trash items, we colored Valentine hearts.

I could do more accidents if they turn out like this. [[And sorry that I didn’t take any pictures of the cookies….but I promise they look amazing and taste even better!]]

Whole Wheat Oatmeal Caramel Chocolate Chip Cookies


  • 1/2 cup (1 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/3 cup oatmeal
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup sea satl caramel chips
  • 1/3 cup chopped pecans


  1. Preheat oven to 350 degrees F
  2. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Add the flours, oatmeal, baking soda, and salt in to the bowl and mix on low until completely combined. Stir in the chocolate chips, sea salt caramel chips, and pecans. Drop by rounded tablespoon onto ungreased baking sheets.
  3. Bake for 10-12 minutes or until cookies are set and golden brown around the edges.
  4. Let cool for 2 minutes on cookie sheet before transferring to a cooling rack.
