What a day it was!

It started off with a two hour work delay due to freezing temperatures. Which is one thing I’m not complaining about, I wish work was on a permanent two hour delay ;)

Then as I’m trying to get ready for work it became apparent really quick that the pipes to our bathroom were frozen. I tell ya us Albuquerqueans are not prepared used to this cold weather.

After almost slipping on a patch of ice trying to get in to my car I was finally headed off to work.

I swear my hands (even though I had gloves on) almost froze to the darn steering wheel.

Once at work things got even worse.

New Mexico under went a State of Emergency. The gas company was slowly having to shut of gas to the entire state!

This is where the headache started. The phone was ringing off the hook with residents asking if they were gonna be loosing gas. Unfortunately I didn’t have an answer for them. I don’t work for the gas company people.

It’s amazing the difference in actions between a home owner and an apartment renter.

Apartment renter: thinks that the office is responsible for EVERYTHING. That living  in an apartment excuses them from any type of Statewide shutdown.

Home owner (me): Hears about the chance of a gas shut off and starts thinking about where my electric heater is and ready to pile on the blankets, socks, and sweats.

See where my frustration comes from?

Luckily my area of town (The Westside) didn’t have to experience a gas shut off. Shew!

After a day of stress and a pounding headache I knew there was only one thing to do…eat chocolate!

Everything in the world is suddenly right. The headache started to subside and I was now able to enjoy this New Mexico Arctic Blast.

Triple Chocolate Chip Loaf Cake
Adapted from How Sweet It Is

Ingredients
1 2/3 cups all-purpose flour
1/2 tsp baking soda
1/2 cup cocoa
1 1/3 cups sugar
1 1/2 sticks butter
2 eggs
1 tbsp vanilla
1/3 cup sour cream
1 cup semi-sweet chocolate chips
1/2 cup white chocolate chips

Directions

Preheat the oven to 325 degrees F.

Put the flour, baking soda, cocoa, sugar, butter, eggs, vanilla, and sour cream into the processor and blitz until a smooth, satiny brown batter.

Scrape down with a rubber spatula and process again while pouring the boiling water down the funnel. Batter will be more a little more runny now.

With the food processor off, add in the chocolate and white chocolate chips, mixing in to the batter with the spatula. I left the blade in because I didn’t want to expose the hole in the middle of the food processor bowl.

Scrape and pour the batter into the prepared loaf tin and put into the oven, cooking for about 1 hour. When ready, the loaf will be risen and split down the middle and a cake-tester will pretty well come out clean.

The weather’s been brutal here in NYC as well…I think your triple chocolate loaf cake might help me get through winter :) It looks delicious and super chocolatey. You have a great blog!

You’re nuts, Steph! No, you’re chocolates :-) The loaf cake looks stupendous! I hope that it did bring you back to a happy place in your life! I’m sorry about all the weather issues :-( If only Mother Nature would bring some actual winter here to So Cal!!!

Chocolate does have that way of curing all that ails us, mentally and physically. Your chocolate cake looks amazing, so rich. Keep warm, and if you get cold, Bake!

This weather is a shock to the whole country. You wouldn’t believe how much snow we have up here right now! But I would happily munch on some of this cake to eat away my miseries.

When trouble appears, eat chocolate! That’s what I do at least. The cake looks great, I’m going to keep it in mind for emergency “need chocolate” days.
