Yay! We survived Monday!

I think we should celebrate…don’t you?

Surviving Monday is a big deal. Well, in my book it is. Because Monday for me is usually the day from hell.

Monday means residents have had two days for something to go wrong in their apartment, or something happened to their bank account, or a neighbor gave them a bad look, and they come storming in to my office at 8:30 and unload on me.

Sometimes the come in screaming, sometimes they come in cursing, and sometimes they come in crying.

Again, this is all happening with my first 20 minutes of being at work.

Did I mention how much I love Mondays?

I love Mondays for giving me migraines.
I love Mondays for making me irritable.
I love Mondays for making my week start off bad.
I love Mondays for making me want to run and hide
      …and eat a pint of Ben and Jerry’s
I love Mondays for making me want to walk out the door and never look back.

The only real reason I love Mondays is because it gives me something to celebrate, but the celebration only comes at 5:30 when the day has ended and I am back in the comfort of my own world, in my car, jamming out to feel good tunes.

And the best way to celebrate is with Chocolate.

Duh…winning! (Do people still say that? Cuz if not, I need to stop)

How about we stuff our chocolate with a marshmallow pumpkin butter cream. And roll it in some sprinkles. Think that’s enough celebration?

Yes, I think so…er…maybe we could add a glass of chocolate to the mix and really call this a party. Excuse me while I grab a glass (and maybe turn it in to an adult beverage).

Hey, I gotta figure out how to survive the other 5 days, right?! 

Chocolate Pumpkin Butter Whoppie Pies

For cakes:
2 cups all-purpose flour
1/2 cup cocoa powder
1 1/4 teaspoons baking soda
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla
1 stick (1/2 cup) unsalted butter, softened
1 cup packed brown sugar
1 large egg

For filling:
1 stick (1/2 cup) unsalted butter, softened
1 1/2 cups confectioners sugar
1 7oz jar of Marshmallow Fluff
8 oz cream cheese, softened
1 teaspoon vanilla
3 tablespoons Pumpkin Butter

Colored Sprinkles for decorating

Preheat oven to 350°F.

Whisk together flour, cocoa, baking soda, and salt in a bowl until combined.

Beat together butter and brown sugar in a stand mixer with paddle attachment on medium-high until light and fluffy, about 3 minutes. Scrape sides down and add in the egg, beat until egg is fully incorporated. Reduce speed to low and alternately mix in flour mixture and buttermilk in batches, beginning and ending with flour, scraping down side of bowl occasionally, and mixing until smooth.

Using an ice cream scoop, scoop batter on to baking sheets, spacing them about 2 inches apart. Bake for 11 to 13 minutes or until tops of cakes spring back when touched. Transfer to a cooling rack and let cool completely.

Beat together butter, confectioners sugar, marshmallow, cream cheese, pumpkin butter and vanilla in the bowl of a stand mixer, beating until smooth, about 3 minutes. 

To form you whoppie pies, spread a tablespoon or two of filling on the flat sides of half of cakes and top with remaining cakes. Roll the sides of the whoppie pies through the sprinkles, until filling is completely coated in sprinkles.

What a way to celebrate getting through a Monday! I hear ya on always wanting to turn around and not look back. If I had these waiting for me at home I certainly wouldn’t want to look back at all.

I love the pumpkin butter, that is just amazing and the sprinkles?! I am sold. I love sprinkles

Maybe you need to change jobs xx … although then we wouldn’t have these delicious woopie pies to celebrate the end of Monday with 🙂

My jaw dropped when I saw this. Looks soooo good! I’m obsessed with whoppies pies. They’re just so darn cute! I love that you used pumpkin butter as opposed to the typical pumpkin puree.

Yes we should definitely celebrate surviving Monday!
