I can’t tell you how ready for the weekend I am. I need sleep! Although I’m not one of those lateweekendsleepers. Totally wish I was. But, sleeping in for me is 7 AM. Yes you read right. And yes, I’m crazy.
But hey, sleeping “in” til 7 is way better than waking up at 4:50 every morning like I do on weekdays.
…I’ll take what I can get!
I’ll also take a HUGE plate of the nachos…n e day!
Remember the other day when I made pork in the crockpot? Well naturally since I live in a two person household, we had t-o-n-s of leftovers, and I needed a way to use up all that intense pork.
Nachos were the first thing that came to mind. BBQ nachos. Kind of like the ones they serve at the baseball games. Have you had them? It’s my favorite baseball food. Actually, that’s the only reason I go to baseball games. And for funnel cake…with ice cream. Take me out to the ball game!
The fun thing about nachos is you can add whatever you want to them. It’s like a piece of art and you are the arteest!
My toppings are all very traditional except that I added BBQ sauce and pulled pork. And of course I think this is the best plate of nachos. Forget ground beef.
Here’s to the weekend!
makes a huge plate of nachos
3 cups tortilla chips
1 can refried beans
1/2 cup BBQ sauce
2 cups shredded pork
1 cup shredded cheese
Sour cream, avocado, green onions for topping
Preheat oven to 325 degrees F.
On a baking sheet spread out half the the tortilla chips then spread half the refried beans over the chips. Drizzle 1/4 of BBQ sauce over the beans, then 1 cup of shredded pork, and 1/2 cup of cheese. Repeat this process to create a second layer of nachos.
Bake for 5-7 minutes or until cheese is melted.
Top with sour cream, avocado, and green onions. And feast!
