Trail Mix Scones

Well…yesterday wasn’t so horrible.

I only had 105 unread emails. A three hour meeting with my boss to “fill me in” on the last two week’s shenanigans. A stack taller than my head of files that need to be closed out. And a feeling of migraine insanity with no progress.

Oooh…and a lunch break spent getting an emissions test done, because my vehicle registration expires…um…today. Yeah. Love it.

At least I had these to comfort the spontaneous “wtf am I doing here” under my breath mumbles. Do you ever have that symptom?

I’m bad at snacking. And nothing brings on snacking more than trail mix. Trail mix and Smash is like my ideal perfect night. I could get lost for hours in chocolatey peanut heaven and the thought of a real broadway show based on Marilyn Monroe.

My husband doesn’t see it that way.

I tried to explain that Smash is like the best show e.v.e.r. I told him it was kind of like Glee for adults. He still didn’t buy it.

He’s crazy. Moving on.

So the other night while catching up on my DVR Smash episodes from while I was gone, I was having a few handfuls of peanuts, raisins, and chocolate and started to think about what I could put this in to. I have a secret love for lightly sweet scones that are covered, like seriously covered, in glaze. Once that thought entered my brain. SCONE, Scone, S-CON-E!!! that was all she wrote.

Trail mix scones it was.

Da-ripping in chocolate glaze.

Best thing you’ve ever seen right?

This will make you the most popular person in the office. I swear.

Trail Mix Scones
Makes 16 scones

1 1/2 cups all-purpose flour

1 1/2 cups whole wheat flour

1/2 teaspoon baking soda

2 1/2 teaspoons baking powder

1/2 teaspoon salt

3/4 cup (1 1/2 sticks) very cold butter

1 cup buttermilk

1 egg

1 teaspoon vanilla

1/3 cup slivered almonds

1/2 cup mini M & M’s

1/2 cup cranberries

Preheat oven to 425. In a large bowl add both flours, baking soda, baking powder and salt, whisking with a spoon to combine. Cut the butter in to tablespoons pieces and add to the flour mixture. With your hands incorporate the butter in to the flour mixture. I do this by basically squishing the butter in to the flour. You want to have pea sized pieces of butter, and the flour to look kind of like sand.

In a separate bowl combine the buttermilk, egg, and vanilla, whisk it up really good! Make a well in your flour mixture and pour the egg mixture in to it. With your hands start to swirl the egg around in the flour picking up more and more flour as you keep circling. The dough will start to come together. When the egg is all distributed, add in the almonds, M & M’s, and cranberries. Again, with your hands mix the add ins in to the dough. Form the dough in to a ball and place on a floured countertop, roll the dough out until it’s about and inch to and inch and a half thick. Cut scones in to desired shape, I prefer the triangle shape, but you can always use a biscuit cutter and make them circular.

Place scones on baking sheet and bake for 12-16 minutes or until scones are a light golden brown. Remove from oven and place on wire rack to cool.

Chocolate Ganache Glaze

1/3 cup coconut milk

1/3 cup chocolate chips

Pour milk in to a microwave safe bowl and zap for 2 minutes. Add in the chocolate chips and let sit for a minute. Whisk the chocolate chips in to the milk, the glaze with be thick, but drippy. Using a spoon drizzle the ganache glaze over the tops of the scones. And EAT.

These look absolutely delectable. Even though it’s 7:45am, all I can think about are these trail mix scones and a bowl of chocolate ganache. Yum!

i am totally addicted to Smash too. My dvr decided to stop recording 1/2 way through last night. Not impressed. anywoo, i love these scones. fabulous idea!

Seriously! This is like my breakfast heaven! I love love love scones and then you go & throw M&Ms in there! This is an incredible idea and one that I will absolutely have to copy down. Amazing!

Oh great…I totally have everything I need to make these beauties so guess what I will be making tomorrow! These scones look amazing and hopefully your Wednesday (tomorrow) is just as wonderful. After a day like that you need some snacks. 🙂 And I have never seen Smash but I keep hearing about it. Curiosity will get the better of me I’m afraid…
