It seems like just yesterday I was celebrating that fact that you were gone. And now here you are again. Like the pesky little fly that just won’t go away.
But you know what…today I think I’m ok with that.
Because I’ve got some thing to help me cope.
They start with dough and end with nuts. DOUGHnuts. And chocolate doughnuts none the less!
And since chocolate on Monday just isn’t enough, these have a special little coffee punch built right in. KA-pow!!! These little cuties are like secret Monday Ninjas. And since I need like a dozen Monday Ninjas, you can only imagine what I did with all these doughnuts.
Straight down the hatch! And I didn’t even realize it was happening until there were only crumbs left on my plate.
I was going to take these to work to make everyone’s Monday better. But then I got selfish. And only became concerned with my own Monday battle. Sorry co-workers. Maybe next Monday I’ll do better.
But until then I’ve got chocolate jimmies to lick off my fingers.
…and I’ve got to get this chocolate out of my teeth before I show up to work.
Double Chocolate Coffee Doughnuts
12 chocolate-y Doughnut Ninjas
1 cup whole wheat flour
1/3 cup unsweetened cocoa powder
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon espresso powder
1/4 tsp salt
1/3 cup coconut milk
1/4 cup brewed coffee, at room temperature
1 teaspoon vanilla
1 tablespoon canola oil
3 tablespoons unsweetened applesauce
Preheat oven to 450 degrees and spray doughnut pans with cooking spray.
In a medium bowl add in the flour, cocoa powder, sugar,baking powder, espresso powder, and salt. Whisk until it’s all combined. Then add in the remaining ingredients, whisking until there are no lumps in mixture and is smooth. (If mixture is too thick you can add a little milk, you want it to be the consistency of pancake batter).
Spoon batter in to doughnut pans, filling them about 1/2 way full. Bake doughnuts for 8 – 9 minutes, or until toothpick inserted in doughnut comes out clean. Remove from oven and let stand in pans for a minute, then turn out doughnuts on to a cooling rack. Let cool to room temperature.
3/4 cup semisweet chocolate chips
1 tablespoon coconut oil
1 cup chocolate jimmies
Place chocolate chips in medium sized bowl, microwave on high in 30 second increments until chocolate is melted. Add in the coconut oil to smooth out the chocolate and make glossy. Dunk the tops of doughnuts in chocolate glaze.
In a separate small bowl pour in the jimmies. Dunk the chocolate coated tops in to the chocolate jimmies.
