Quinoa.
It’s a weird name, but it makes a great breakfast.
Especially when it’s warm and hot and topped with peanut butter.
See where I’m going with this? The peanut butter gets all melty.
Then you top it with some apples and call it breakfast.

Apple and Peanut Butter Breakfast Quinoa
makes 2 lucky people a great bowl of break-y
1/2 cup dry quinoa, rinsed
3/4 cup light coconut milk (canned)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla
dash of salt
2 tablespoons peanut butter
1/2 and apple, diced *
1 tablespoons pecans
In a small saucepan bring quinoa, milk, cinnamon, nutmeg vanilla, and salt to a boil. Reduce it to a simmer, cover the pot, and let it cook for 15 minutes. Using a fork, fluff the the quinoa very gently.
Divide the quinoa amongst the two bowls. Top with peanut butter, apples and pecans. Drizzle extra milk on top if you’d like. Then get out your spoon.
*I microwaved my apple chunks for a minute just to soften them

I just had peanut butter and an apple this AM for my breakfast too. I didn’t have quinoa to go with it, but it is one of my favorite flavor combinations. Looks like a very yummy breakfast my dear!

I am loving this end of summer almost fall breakfast. Just what I need when I long for cooler temperatures but don’t want to let summer go.
I’ve had candied walnuts and blueberries mixed into quinoa for breakfast before, but now I need to try this, yum!

I really love apples and I think will love this recipe. Think of apples as little multivitamins. They contain a lot of what your body needs to stay healthy. The benefits are plentiful
