One of our lovely bloggers is having a BABY!!
Rachel of Rachel Cooks is expecting a little man to join her precious family, so Brandy of Nutmeg Nanny and Bradi of BranAppetit put together this SURPRISE Virtual Baby Shower for her. When I got the email there was no way that I could say no. Rachel has become one of my daily blog reads and I am loving that she’s a few months ahead of me in her pregnancy so that I can use her as a gauge of what to expect.
Since she’s having a little boy I knew I wanted to make something that contained blue in it, and I was immediately drawn to BLUEberries.
But I wanted it to be cute and fun.
What is cuter than little pies! YES, mini blueberry pies.
Ok, wait, the only thing that could make these any cuter were if they were on a stick! Right?!

Baby Blueberry Pies on a Stick
makes 8 little pies
1 package prepared pie dough
1 1/2 cups blueberries
1/4 cup sugar
1 1/2 tablespoons cornstarch
1 tablespoon fresh squeezed orange juice
1 egg
1 teaspoon water
Cinnamon/sugar for dusting
8 lollipop sticks
Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
In a medium saucepan bring blueberries, sugar, cornstarch and orange juice to a simmer over low to medium heat. Let mixture cook about 10 –15 minutes or until filling is thick and coats the back of a spoon. Let cool to room temperature before preparing the rest of the pie.
Roll pie dough out to about a 1/4 of an inch thick. Using a 2 1/2 inch round cookie cutter, cut out 16 circles. Place 8 circles on the baking sheet and top each with 1 teaspoon of blueberry filling in the center of dough, leaving a small border. Then put one end of the lollipop stick in the middle of each pie half, pressing down slightly to make sure it’s secure. Place the remaining 8 circles over the tops of the blueberry filling. Using a fork press down around the edge of the pies circles to seal.
In a small bowl beat egg and eater together. Brush the tops of each pie with a little egg wash and the sprinkle with a little cinnamon sugar.
Place baking sheet in the oven and bake for 20 –22 minutes or until pies are a light golden brown. Remove from oven and allow to cool for a few minutes.
