Egg Roll in a Bowl

It’s hot out and nobody wants to be slaving away over a hot meal.

So, I’ve got your back! This recipe is soooo easy and something that we’ve come to love. It’s come together so quickly and is actually really healthy for you.

It’s call Egg Roll in a Bowl [or in this case, a plate]. It’s practically like eating an egg roll, but without the fried wrapper. Which, duh, means wayyyyyy less calories. Yup. Your swimsuit will thank me.

We actually like to pair ours with white or brown rice, but this can easily be served without rice and be considered a really low-carb meal. Are you ready for this flavor packed little dinner? Then get out your skillet, yes, just one skillet, and set your timer for about 25 minutes. Because that’s about all you’re gonna need.

Egg Roll in a Bowl

Prep Time: 5 minutes

Cook Time: 20 minutes

Yield: 4 servings


  • 3 cloves garlic, minced
  • 1/2 cup onion, diced
  • 1 lb ground turkey breakfast sausage [you could use ground pork/turkey/beef]
  • 14 oz bag coleslaw
  • 1-2 green onions, sliced
  • 1/2 red bell pepper, sliced
  • For the sauce:
  • 1/4-1/3 cup low sodium soy sauce
  • 2 tbsp peanut butter
  • 1/2 tsp ginger
  • 1/2 tsp honey [or more to taste]
  • 1/2 lime, squeezed
  • 1/2 tsp sriracha, if you like some spice


  1. In a medium skillet, spray with cooking oil, and set over medium heat. Add the turkey sausage, onion, and garlic, cooking until sausage is completely cooked. With the sausage still in the skillet, add in the coleslaw, green onion, and red bell pepper. Cook for 4-5 minutes, until you've noticed that the coleslaw has cooked down, but still has some crunch to it.
  2. While the coleslaw is cooking down, in a separate bowl, mix up the ingredients for the sauce. Pour that over the sausage mixture, stir, and let cook together for 1-2 minutes.
  3. Serve in a bowl by itself, topped with a few extra green onion slices, or with some rice and edamame!
